With other coffee preparation methods, the extraction time is longer. In such cases, a coarser grind is required.

Experience has shown the following rules:

    • Finely ground coffee is intended for shorter extraction times.
    • Coarser ground coffee is suitable for longer extraction times.

How does grinding affect the taste of coffee?

If you do not use the correct grind for the respective coffee specialty, then, yes, it can affect the taste of coffee. If your coffee tastes watery or a bit sour, it may be because the grinder setting is too coarse. If the coffee is too strong or has a bitter taste, then the grinder is set to grind too fine.

What is under-extraction and over-extraction?

An incorrect setting in the grind can result in the hot water not being able to “pull” the aromas of the coffee. This is called under-extraction or over-extraction.

In the case of under-extraction, not enough ingredients and aromas are extracted from the ground coffee. Thus, the coffee is very light in color, has a flat and very dilute taste.

Overextraction

In overextraction, the water, in addition to the aroma and taste of the coffee, also “draws” bitter substances, such as tannin. These can overpower the aroma and taste of the coffee, and even lead to stomach upset in some cases. In this case, the coffee takes on an extremely dark color and has an excessively intense and unpleasantly bitter taste.

Can I tell the grind of a coffee by its crema?

In espresso, you can tell the degree of grind by the crema. Ideally, this can be done even several minutes after it is prepared. A good crema has a medium brown color (neither too light nor too dark) and if you stir the coffee with a spoon it will not leave a void. If the grind is too fine, the crema will be dark in color.

What is the appropriate grind for each coffee brewing method?

If you want to prepare an espresso with a traditional shutter machine, you need the best possible result from the ground coffee. In this type of machine, the extraction should last from 25 to 30 seconds. For this reason, an extremely fine grind is required, so that the water can quickly “pull out” all the aromas of the coffee.

To make filter coffee, the coffee should be medium ground. This is due to the longer extraction time. Also, if the coffee is ground too finely it can clog the filter. The same goes for using a Chemex. The coffee should also be ground medium. If you choose to make your coffee with a French Press, then the coffee should be ground at a smaller setting, meaning it should be coarser.

If you want to make an espresso with a fully automatic coffee machine, you should set the grinder to grind finely because in this type of automatic coffee machine, the contact time of the coffee with the water is short. The same applies to all other drinks that are based on espresso. This means that for a cappuccino or latte macchiato, the grinding should be fine.

However, if you choose to make a Café Crème, or Americano, with a fully automatic coffee machine, the coffee should be much coarser than when making an espresso. The preparation time for a Café Crème is the same as the preparation time for an espresso. The difference lies in the amount of water that passes through the coffee. Thus, it is important that the coffee grind is coarser when we want to make a Café Crème than when we want to make an espresso, but also a little finer than when we want to make a filter coffee with a French Press.

How coffee roasting affects the degree of grinding

In addition to the preparation method, the type of coffee beans and especially the roasting plays an equally important role in the correct adjustment of the grinding of coffee beans:

  • Lightly roasted coffee beans are harder and require a finer grind.

2. The Leaf

 

A so-called leaf pattern is created by pouring the milk foam from left to right, dragging it towards the rim of the cup that is being filled with espresso, slightly offset from the center. This creates a zigzag pattern. Once this pattern reaches the rim of the cup, complete the leaf with a final movement perpendicular to the sweeping motion. This creates the "stem" of the leaf. The challenge here lies in choosing the right flow angle. The steeper the angle, the more white foam will be visible on the surface of the espresso.

The tulip shape poses the biggest challenge for most baristas. Filling this design requires repeatedly putting down the milk jug, which requires considerable skill. First, the milk is poured so that it flows only under the cream and is not visible on the surface. This is done until the cup is half full. Then, the first dot is placed slightly below the center, so that the milk foam penetrates the cream. This is followed by a second, third, fourth and possibly a fifth dot along a line. Traditionally, there are three dots. It is important that the last dot is poured in a heart shape and the reverse movement is through the entire line of dots.

6 TIPS FOR LATTE ART

1- Use a round, bulbous cup, if possible, to have a large surface area for latte art.

2- Consistency is key. Therefore, swirl the freshly frothed foam in a circular motion to make the air and milk emulsion even more homogeneous and fine-pored. This allows you to extend the rolling phase and prevents the milk and foam from separating. Once this happens, latte art is no longer possible.

5- For beginners, it is easier to start latte art with a 0.3 liter jug ​​and a pointed spout, as you can work more directly and precisely on the surface. However, making milk foam in advance is easier in larger jugs (0.75 L or 1 L) because you have more time for the foaming process. The frothed milk can then simply be poured into the smaller jug.

6- Practice tip: Mix half cold water and half milk, then froth it and practice spreading it. This saves resources!

The final result is not only about the taste but also the texture. Its appearance is also important, as it is at the top of the most popular drinks. To achieve a perfect milk froth, you need the right equipment, a lot of practice, but above all: the right instructions!

So we present to you the most important steps for the perfect milk froth! If you follow some important rules, then you don't need a lot of equipment. Only the following 3 accessories are recommended: Ideally, you will need a stainless steel milk jug (mota). Due to the good conductivity, you will easily achieve the ideal temperature. If you prefer a particularly thin foam, you may need a rubber mat. If you are just starting your first attempts in the world of barista, you will also need a thermometer, as temperature plays a very important role in the quality of the result. We will discuss this more later.

1. MILK

Normally any milk can be used to make frothed milk. Even lactose-free varieties, low-fat varieties or even oat or soy milk are suitable for making a nice and frothy frothed milk. The protein content of the milk is what makes the difference. The higher the protein content of the milk, the more stable the froth will be. If the milk's fat content is also high, then the result will be even creamier. Regardless of the type of milk you use, it should always be fresh and chilled before you start frothing milk.

2. THE JUG

Next, you need to choose the right jug with the appropriate capacity. Fill the jug with fresh, iced milk up to the tip of the spout. The amount of milk is also crucial for the final result. If you add too little milk, the result will not be creamy, with volume and with a nice consistency. If you want to make a little frothed milk, then you should choose a smaller jug, i.e. not 300 ml, but 150 ml for example.

3. TEMPERATURE

As we mentioned above, the use of a thermometer is recommended for people who do not have much experience. The special thermometer is placed directly in the milk and determines the exact temperature. As a rule, the temperature is right up to where you can still touch the hot jug, i.e. between 65° and 70°C, never higher. If the milk gets too hot, the proteins coagulate, the lactose burns and the foam dissolves.

4. STEAM

The coffee machine nozzle will accumulate water vapor that should be cleaned thoroughly before the next use. If the water vapor is not removed before frothing milk, it will dilute the foam and affect the creamy texture that we need to achieve. To properly clean the coffee machine nozzle, open it for a while and let the steam be released. Then you can start making milk foam. The process of making milk foam is divided into 2 phases: In the first phase, the “milk spreading”, the nozzle enters below the surface of the milk, creating micro-foam. In the second phase, the “milk rotation” phase, the foam resulting from the milk vortex becomes thinner and more uniform.

5. THE SMOOTHING PHASE

First, we take the jug with the frozen milk and immerse the steam nozzle at a 45 ° angle for 1 – 2 centimeters below the surface of the milk and gently open the steam. One of your hands should always touch the jug of milk to control the temperature. Then release steam into the milk while moving the jug slightly up and down until the temperature rises slightly. At this stage, a characteristic whistling sound is heard and the first bubbles form. For cappuccino or latte macchiato this stage will take longer since the milk foam for these 2 coffee specialties will need to gain more volume.

6. THE ROTATION PHASE

Once the milk becomes lukewarm (i.e. reaches 30 – 40°C), the next step begins: no more air is allowed in. Instead, the nozzle is immersed a little deeper in the milk and moves in a circular motion inside the jug. This circular motion removes the larger bubbles and “cleans” the foam, so to speak. If the temperature of the jug rises so much that you can no longer touch it, the process is over and the steam nozzle can be deactivated.

7. TAPPING THE JUG

By tapping the jug a few times on the table or rubber mat and carefully rotating it a few times, the result will be even thinner. If there are any large steam bubbles left, they will disappear and the froth will become firmer and more uniform. Then you need to act quickly! Frothed milk has a short shelf life, so you need to use it immediately! You can use the frothed milk for cappuccino, latte macchiato or other coffee specialties, even to create latte art designs. If the frothed milk is shiny and no bubbles can be seen on the surface, then you have made a perfect frothed milk that you can serve immediately.

8. CLEANING

Cleaning the nozzle and the jug immediately after use will save you a lot of time because once it dries, it is very difficult to clean. Therefore, it is useful to always have a wet cloth near the coffee machine.
